Medium rare to medium, but I'll eat it very rare as well, too. I tend to dislike super rare meats because the blood all runs into your other food, like typically mashed potatoes, and nobody likes watery mashed potatoes. If I had a separate plate just for the meat, I'm game though.

 

For leanness, I don't care. I'll eat the chunks of fat too, sometimes that's the best part. I hate tough meat though.

Generously seasoned with salt and pepper, cooked sous vide @127f for about an hour, then seared over a roaring charcoal grill for like a minute.   

 

But I'm more of a chicken eater.
